Easiest Rotisserie Chicken and Baked Potatoes



This slow cooker rotisserie chicken tastes so good, and is so simple to make.  The baked potatoes that cook under the chicken soak up all the yummy broth, making the potatoes tender.  



Start by scrubbing your potatoes clean.  Season the potatoes with a little salt and pepper-or whatever you like.  No need to add in oil or butter.  Wrap up your potatoes in a little foil and place in the bottom of your slow cooker.  I like to throw a few bay leaves on top of the potatoes.  







Next, rinse your chicken and season the inside and top of the bird with your favorite seasonings.  I used a mixture of sea salt, pepper, ground mustard, old bay seasoning and whole mustard seeds.  Place chicken on top of foil wrapped potatoes.  Simple as that.  Either cook on high for 4 hours or on low for 7-8 hours.

You will need:
*1 whole chicken
*4 or 5 medium potatoes
*3 bay leaves
*2 tsp salt
*1 tsp pepper
*2 tsp old bay seasoning
*1/2 tsp ground mustard
*a pinch of whole mustard seeds

Scrub potatoes clean; season with salt and pepper and wrap in foil.  Place potatoes in the bottom of slow cooker.  Place a few bay leaves on top of potatoes.  Rinse chicken and season inside and on top with seasonings.  Place chicken on foil wrapped potatoes and cook on high for 4 hours, or on low 7-8 hours.
